Huevos Rancheros Pictures  (January 2007)

Warm two tortillas on a hot comal until they're soft.  (I'm using my grill, set to 250)

Arrange the tortillas overlapping a little in a breakfast platter and spread generously with warm refried beans.

 Spread the beans with chopped onions.  If you like a lot, use a lot!

Add a generous helping of shredded cheese.  This is cheddar & jack mixed. 

I warm a couple more tortillas and cap  the ensemble, turn the grill up to 300, and fry some eggs.

Eggs on top of the ensemble, I put a cup of hot chili on top of the whole thing!.

Finish with a little Mexican-style salad on the side.   A really nice, well-balanced breakfast!
