DINER FOOD
The legendary Floyd "Sam" Johnson is retired now,
but before he retired he passed many of his secrets on to me, as I sat and
watched him cook in the 10-stool diner called the King's Chef at 110 East Costilla in Colorado Springs. Here are my recipes for his favorite
dishes.
Eggs in the Nest
These are a diner standard; a fast meal for one or two.
French Toast.
Another quickie; and better than an Egg McMuffin®.
Omelets without an omelet pan.
The test of a short-order cook -- omelettes on the
grill. Here's the secret.
Industrial Strength Hash Browns.
Sam made the best hash browns I ever ate, and he
taught me how.
Breakfast Burritos.
Sam hardly ever made these; they're easy tho, if you
have flour tortillas.
The "Breakfast Thing" wasn't
on the menu at the King's Chef, but he sold a hundred a day, at least.

Colorado Green
Chili.
Required for many of Sam's secret dishes, as well as
Rick's Killer Breakfast Burritos.
Texas Red
