Belizean Recipes

I have modified some of these recipes to Gringo tastes, but I note each change, and the reasoning behind it. Your taste may be different.  If so, write me and let me know!

Beans Mother Teresa's recipe for beans is the standard, but we add some gourmet ingredients.  

Belizean Boil Chicken.  A staple in the Belizean diet, the trick is to use the left over chicken for Taquitos or for Fry Rice

Belizean Bake Chicken.  Belizeans are big on barbeque.  Here's the way I reproduce the taste in an oven. You can use a "barbie" if you've got one. 

Belizean Bake Fish.  Foil wrapped, these are the best fish I've ever tasted.  Healthy, too. 

Belizean Chicken Stew.   I've modified their boiled chicken by throwing in veggies as the cooking progresses, to produce a one-dish meal for a crowd.  (Three, huh?) 

Belizean Potato SaladThanks to my friend KC for the recipe. 

Ceviche (Conch, Barracuda, Shrimp.)   Raw?  Heavens no!  Cooked in lime juice, this seacoast standard is easy to get right.  

Conch Fritters. Basically, these are Belizean Hush Puppies!!  They are conch-flavored, which makes them extra special.  (Kinda like Abalone, eh?))

Fry-JacksBelizean version of a sopapilla, these are perfect as a breakfast snack.

Gibnut Stew New  Let me know if this sounds right.  (??)

Belizean Scramble EggsTomatoes make the difference, but I also add avocado. 

Taquitos.  The Belizean answer to build-it-yourself Tex-Mex fajitas.  Put out the ingredients and let everybody pig out!

Tomalitos.  Let Charlotte tell you how the Belizeans build 100 little Mexican-style tamales at a time here. Then we'll cut the recipe down to size for you here. 

Stew Beans and RiceThis is the Kriol name for "Beans and Rice."  Basically, it is just a bowl of beans that you pour over a plate of white rice.  <surprise>

June's Fry Rice. Oh my gosh.  I found out about this one, and now I cook it a couple of times a week. Everyone raves about it. "Flavor, flavor, flavor!!"

Plantains.  Maybe you've seen these banana-looking things in the produce section in the States?  Well, they're not bananas, and you can't eat them like bananas.  You have to cook them, and here's how.

Rice and Beans. When States-based Belizeans wax nostalgic, they say "I can't get back to Belize to get some Rice and Beans."  It's the standard Belizean fare, and I have the secrets here.

Ingredients.  If you're shopping for ingredients, you should read this first.

A linguistic note: Kriol (Creole) doesn't bother with past tense verbs.  Thus, ground beef or pork become "grind beef" and "grind pork."  Fried chicken is "fry chicken."   Simple once you figure it out.  If you want to know ALL about Kriol, look here.
